    Make the Dough

    In a large mixing bowl, combine whole wheat flour and salt. Gradually add water and knead the mixture until a smooth dough forms. Add oil or ghee and knead again for a few minutes until the dough is soft and pliable.

    Cover the dough with a damp cloth or plastic wrap and let it rest for at least 30 minutes. This helps in gluten formation, making the roti softer.

    Divide and Roll

    After resting, divide the dough into equal-sized balls (about the size of a golf ball). Dust each ball with a little flour and roll it out on a flat surface into a circle about 6-8 inches in diameter.

    Cook the Roti

    Heat a tandoor or a heavy skillet (tawa) over medium-high heat. Place the rolled-out roti on the hot surface and cook until bubbles form on the surface (about 1-2 minutes). Flip it over and cook for another 1-2 minutes. If using a tandoor, stick the roti to the walls of the tandoor and cook until it puffs up.
