Prepare the Marinade
In a large bowl, combine the yogurt, garam masala, lemon juice, minced garlic, grated ginger, and salt. Mix well until all ingredients are combined.

Marinate the Cauliflower
Add the cauliflower florets to the marinade and toss to coat evenly. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes, or up to 2 hours for deeper flavor.

Cook the Cauliflower
Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper. Arrange the marinated cauliflower in a single layer on the sheet and roast for 25-30 minutes, or until tender and slightly charred.

Serve
Once cooked, remove the cauliflower from the oven and serve hot drizzled with the tomato jus. Garnish with chopped cilantro.
