Prepare the Chickpeas
Soak the chickpeas in water overnight. Drain and rinse before cooking.

Add Aromatics
Stir in the ginger and garlic, and sauté for another 2-3 minutes until fragrant.

Spice it Up
Add cumin seeds, coriander powder, turmeric, red chili powder, and salt. Cook for 2 more minutes.

Add Chickpeas and Tomato Puree
Add the soaked chickpeas and tomato puree. Mix well.

Slow Cook
Add enough water to cover the chickpeas, bring to a boil, then reduce heat to low and cover. Let it cook for 1.5 to 2 hours, stirring occasionally.

Finishing Touch
Once the chickpeas are tender and the mixture has thickened, taste and adjust seasoning. Garnish with fresh cilantro before serving.
