Rinse the Rice
Rinse the basmati rice under cold water until the water runs clear. This removes excess starch.

Toast the Cashews
In a pan, heat 1 tablespoon of oil over medium heat. Add the cashews and toast them until golden brown. Remove and set aside.
Cooking

Sauté Spices
In the same pan, add the remaining tablespoon of oil. Add black mustard seeds and cumin seeds. Once they start to splutter, add turmeric powder and stir for a few seconds.

Cook Rice
Add the rinsed rice to the pan and stir for a minute. Then add water and salt. Bring to a boil, then reduce heat to low, cover, and cook for 15 minutes.

Add Lemon and Cashews
Once the rice is cooked, remove from heat and let it sit for 5 minutes. Fluff the rice with a fork, then stir in lemon juice, lemon zest, and toasted cashews.

Garnish and Serve
Garnish with fresh cilantro and serve warm.
