Marinate the Chicken
In a bowl, combine the yogurt, minced garlic, grated ginger, cumin powder, coriander powder, garam masala, chili powder, and salt. Add the chicken thighs and coat well. Cover and marinate in the refrigerator for at least 1 hour, preferably overnight.

Cook the Chicken
Heat 1 tablespoon of cooking oil in a large skillet over medium heat. Add the marinated chicken and cook until browned and cooked through, about 5-7 minutes. Remove from the skillet and set aside.

Make the Sauce
In the same skillet, add the remaining tablespoon of oil. Add the chopped onion and sauté until translucent. Then, add the diced tomatoes and cook until soft, about 5 minutes. Stir in the remaining spices (cumin, coriander, garam masala, chili powder) and season with salt.

Combine Chicken and Sauce
Add the cooked chicken back into the skillet along with the bell peppers. Stir well to coat with the sauce, and let it simmer for another 5-10 minutes until the peppers are tender.

Garnish with fresh cilantro and serve hot with rice or naan.
