    Clean the Fish

    Clean the branzino thoroughly under cold water, then pat dry with paper towels. Season the inside and outside with salt and black pepper.

    Make the Spice Mixture

    In a pan, dry roast the mustard seeds until they start to pop. Remove from heat and mix with grated coconut, turmeric powder, chopped green chilies, chopped coriander, and lemon juice.

    Stuff the Fish

    Stuff the cavity of the branzino with the prepared spice mixture.

Wrapping and Cooking

    Wrap the Fish

    Lay a banana leaf flat on a clean surface. Place the stuffed branzino on top of the leaf and fold the leaf over the fish, creating a secure package. Repeat with the second leaf if necessary to ensure it is fully covered.

    Cook the Fish

    Steam the wrapped fish in a steamer or place it in a shallow dish with a little water and cover it tightly with foil. Cook for about 25-30 minutes, or until the fish is cooked through and flaky.

    Serve

    Carefully unwrap the banana leaves and serve the branzino hot with extra lemon wedges and fresh coriander on top.
