Preparation Steps
- 1
Prepare the fries
Peel the potatoes and cut them into thick strips. Rinse in cold water and dry thoroughly with paper towels.
- 2
Fry the potatoes
Heat vegetable oil in a deep pot or fryer to 350°F (175°C). Fry the potato strips in batches until golden brown and crispy, about 5-7 minutes. Remove and drain on paper towels. Season with salt.
- 3
Make the batter
In a mixing bowl, combine flour, cornstarch, baking powder, salt, and black pepper. Gradually whisk in the beer until the batter is smooth and thick.
- 4
Prepare the halibut
Cut the halibut fillets into bite-sized chunks. Dip each piece into the batter, ensuring they are fully coated.
- 5
Fry the halibut
In the same hot oil used for the fries, carefully add the battered halibut pieces. Fry until golden brown and cooked through, about 4-5 minutes. Remove and drain on paper towels.
- 6
Serve
Serve the beer-battered halibut chunks alongside the crispy fries and lemon-caper aioli for dipping.
