Prepare the Ingredients
Chop the jalapenos, slice the tomato, red onion, and set aside the lettuce and cheese.
Cook the Bacon
In a skillet over medium heat, cook the bacon slices until crispy. Remove and drain on paper towels.
Form the Patties
In a bowl, season the ground filet mignon with salt and black pepper. Form into two equal patties.
Cook the Burgers
In the same skillet used for bacon, cook the beef patties over medium-high heat for about 4-5 minutes per side for medium doneness. In the last minute of cooking, place a slice of Swiss cheese on each patty to melt.
Toast the Buns
While the burgers are cooking, split the burger buns and toast them in a separate skillet or toaster.
Assemble the Burgers
Spread chipotle aioli on the bottom half of each toasted bun. Place the burger patty with melted Swiss cheese on top, followed by bacon, jalapenos, lettuce, tomato, and red onion. Top with the other half of the bun.
Serve
Serve the burgers with a side of fries.
