Prepare the Onions

Slice the onions thinly and set aside.

Sauté the Onions

In a large pot, heat the butter and olive oil over medium heat. Add the sliced onions and cook, stirring frequently, until they are caramelized and golden brown, about 25-30 minutes.

Add Garlic and Wine

Add minced garlic to the pot and sauté for 1-2 minutes. Then, pour in the white wine and let it simmer for about 5 minutes, scraping the bottom of the pot.

Add Broth and Herbs

Stir in the beef broth, thyme, bay leaf, salt, and pepper. Bring to a boil, then reduce heat and let it simmer for 30 minutes.

Prepare the Baguette

While the soup is simmering, slice the French baguette into 1-inch thick slices and toast them until golden brown.

Remove the bay leaf from the soup. Ladle the soup into bowls, place the toasted baguette slices on top, and sprinkle with Gruyère cheese. Place the bowls under a broiler until the cheese is bubbly and golden.
