    Prepare the Bordelaise Sauce

    In a saucepan, heat 1 tablespoon of olive oil over medium heat. Add shallots and sauté until translucent. Pour in red wine and simmer until reduced by half. Stir in butter and season with salt and pepper. Keep warm.

    Cook the Prosciutto

    In a skillet, cook prosciutto slices over medium heat until crispy. Remove and place on paper towels to drain.

    Prepare the Filet Mignon

    Rub filet mignon with remaining olive oil, salt, and black pepper. Preheat grill to high heat. Grill filets for 4-5 minutes on each side for medium-rare, or to your desired doneness.

    Plate the Dish

    On each plate, place a serving of mashed potatoes. Top with grilled filet mignon, drizzle with Bordelaise sauce, and garnish with crispy prosciutto and bleu cheese. Serve with chef's vegetables on the side.
