Preparation and Baking
Making the Dough
In a bowl, combine warm water and yeast. Let it sit for 5-10 minutes until frothy. In a large mixing bowl, combine flour and salt. Add the yeast mixture and olive oil. Mix until a dough forms, then knead on a floured surface for about 10 minutes until smooth.
First Rise
Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for about 1-2 hours, or until doubled in size.
Preheat Oven
Preheat your oven to the highest temperature (usually around 475°F or 245°C) and place a pizza stone or baking sheet inside to heat up.
Assemble the Pizza
Once the dough has risen, punch it down and roll it out into a circle on a floured surface. Transfer the dough to a piece of parchment paper. Spread tomato sauce evenly over the dough, leaving a small border. Tear the mozzarella into pieces and distribute them evenly on top. Sprinkle with salt and pepper.
Bake the Pizza
Carefully slide the pizza (with parchment) onto the hot stone or baking sheet. Bake for about 10-12 minutes or until the crust is golden and cheese is bubbly.
Finish and Serve
Remove the pizza from the oven and top with fresh basil leaves. Let it cool for a few minutes, slice, and serve.
