Simmer the Stew
Bring the mixture to a boil over high heat. Once boiling, reduce the heat to low, cover the pot, and let it simmer for 1.5 to 2 hours, or until the beef is tender and the vegetables are cooked through.

Finish and Serve
Remove the bay leaves from the stew. Taste and adjust seasoning if necessary. Ladle the stew into bowls and serve hot, garnished with additional fresh parsley if desired.
