Method
Pork Cutlet
Prepare the Pork
Pound the pork loin pieces to about 1/2 inch thick using a meat mallet. Season both sides with salt and black pepper.
Breading Process
Set up a breading station with three shallow dishes: one with flour, one with beaten eggs, and one with breadcrumbs. Dredge each pork cutlet first in flour, then dip in eggs, and finally coat with breadcrumbs.
Frying the Cutlets
In a large skillet, heat the vegetable oil over medium heat. Fry the breaded cutlets for about 4-5 minutes on each side, or until golden brown. Remove and drain on paper towels.
Mushroom Gravy
Add Garlic
Stir in minced garlic and cook for 1 minute until fragrant.
Make the Gravy
Sprinkle flour over the mushroom mixture, stirring to combine. Gradually add chicken broth while stirring continuously to prevent lumps. Bring to a simmer and let thicken.
Finish with Cream
Stir in heavy cream, season with salt, black pepper, and chopped parsley. Simmer for an additional 2-3 minutes.
Spätzle
Red Cabbage
Prepare the Cabbage
Shred the red cabbage and place it in a large pot.
Cook with Vinegar and Sugar
Add apple cider vinegar, sugar, and salt to the pot. Cook over medium heat for about 20 minutes, stirring occasionally, until the cabbage is tender.
Mini Onion Pie
Mix Egg and Cream
In a bowl, whisk together eggs, heavy cream, salt, and black pepper. Stir in the sautéed onions.
Fill the Pie Crust
Pour the onion mixture into the ready-made pie crust. Bake in a preheated oven at 375°F (190°C) for 30-35 minutes or until set and golden.
