Method

Preparation

  1. 1

    Cook the Bacon

In a large pot, cook the chopped bacon over medium heat until crispy. Remove the bacon and set aside, leaving the rendered fat in the pot.

  2. 2

    Sauté Vegetables

In the same pot with the bacon fat, add the chopped onion, celery, and carrots. Sauté for about 5 minutes until softened.

  3. 3

    Add Potatoes and Broth

Add the diced potatoes and the broth to the pot. Bring to a boil, then reduce heat and simmer for about 10 minutes until potatoes are tender.

  4. 4

    Incorporate Corn and Lobster

Stir in the sweet corn and lobster meat. Cook for an additional 5 minutes until heated through.

  5. 5

    Add Cream and Seasonings

Pour in the heavy cream, and season with salt, black pepper, and cayenne pepper. Stir well and let simmer for another 5 minutes.

  6. 6

    Serve

Ladle the chowder into bowls, garnish with crispy bacon and fresh parsley before serving.
