    Prepare Vegetables

    Peel and chop the potatoes, leeks, onions, and carrots into small, even pieces for even cooking.

    Sauté Aromatics

    In a large pot, melt the butter over medium heat. Add the chopped onions and leeks, and sauté for about 5 minutes until they are soft and translucent.

    Add Garlic and Carrots

    Add the minced garlic and chopped carrots to the pot. Sauté for an additional 3-4 minutes until fragrant.

    Add Potatoes and Broth

    Add the chopped potatoes and vegetable broth to the pot. Bring to a boil, then reduce heat to a simmer. Cover and cook for about 20 minutes, or until the potatoes are tender.

    Blend the Soup

    Once the potatoes are cooked, use an immersion blender to puree the soup until smooth. If you don’t have an immersion blender, carefully transfer the soup in batches to a countertop blender.

    Add Cream and Season

    Stir in the heavy cream, salt, and black pepper. Heat through for another 5 minutes on low heat, ensuring it doesn’t boil.

    Ladle the soup into bowls and garnish with fresh chives. Serve warm and enjoy!
