Chili Preparation

    Sauté the Onions

    In a large pot or Dutch oven, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes or until the onions are translucent.

    Cook the Ground Beef

    Add the ground beef to the pot. Cook, breaking it up with a spoon, until browned and cooked through, about 7-10 minutes. Drain excess fat if necessary.

    Add Spices and Tomatoes

    Stir in the chili powder, cumin, salt, and black pepper. Cook for an additional minute to toast the spices. Then, add the diced tomatoes and stir well to combine.

    Add Beans

    Add the drained kidney beans and pinto beans to the pot. Stir everything together and bring the mixture to a simmer.

    Simmer the Chili

    Reduce the heat to low, cover, and let the chili simmer for 20-30 minutes. Stir occasionally to prevent sticking.

    Garnish and Serve

    Ladle the chili into bowls and garnish with shredded cheddar cheese and diced red onion. Serve hot.
