    Prepare the Butternut Squash

    Peel the butternut squash, cut it in half, remove the seeds, and chop it into small cubes.

    Sauté the Aromatics

    In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.

    Add Garlic and Thyme

    Mince the garlic and add it to the pot along with the fresh thyme. Sauté for an additional 2 minutes until fragrant.

    Cook the Squash

    Add the cubed butternut squash to the pot and stir well. Cook for about 5 minutes, allowing the squash to soften slightly.

    Add Broth

    Pour in the vegetable broth and bring the mixture to a boil. Once boiling, reduce the heat and simmer for 20-25 minutes, or until the squash is tender.

    Blend the Soup

    Using an immersion blender, blend the soup until smooth. Alternatively, you can transfer the soup in batches to a blender.

    Add Cream and Season

    Stir in the heavy cream, salt, and black pepper. Heat through for another 5 minutes.
