Prepare the Batter
In a mixing bowl, combine the chickpea flour, water, cumin seeds, turmeric powder, red chili powder, salt, and baking powder. Mix until you have a smooth batter.

Add Vegetables
To the batter, add the sliced potatoes, onions, chopped spinach, cauliflower florets, and green chilies. Stir well to coat the vegetables evenly with the batter.

Heat the Oil
In a deep frying pan, heat the oil over medium heat. To check if the oil is ready, drop a small amount of batter into the oil; it should sizzle and rise to the surface.

Fry the Pakoras
Using a spoon or your hands, drop small portions of the batter-coated vegetables into the hot oil. Fry in batches to avoid overcrowding. Fry until golden brown and crispy, about 4-5 minutes.

Drain and Serve
Once cooked, remove the pakoras from the oil and drain them on paper towels to remove excess oil. Serve hot with chutney or sauce of your choice.
