Assembling and Cooking the Samosas
Roll Out the Dough
After resting, divide the dough into equal portions. Roll each portion into a thin oval shape. Cut the oval in half to create two semi-circles.
Form the Samosas
Take one semi-circle and create a cone shape by folding it over. Seal the edge with a little water. Fill the cone with the potato and pea filling, then seal the open edge by pressing it together with your fingers.
Fry the Samosas
Heat oil in a deep frying pan over medium heat. Once hot, carefully add the samosas to the oil. Fry them until golden brown and crispy, about 5-7 minutes. Use a slotted spoon to remove them and drain on paper towels.
Serve
Serve the samosas hot with mint chutney or tamarind sauce.
