Cooking the Rice

Rinse the Rice

Thoroughly rinse 2 cups of basmati rice under cold water until the water runs clear. This removes excess starch and prevents the rice from becoming sticky.

Soak the Rice

Soak the rinsed rice in water for 30 minutes. This helps the grains to expand and cook evenly.

Cook the Rice

In a large pot, bring 4 cups of water to a boil. Add the soaked rice and a pinch of salt. Cook uncovered for 10-12 minutes until the rice is 70% cooked. Drain the rice and set aside.

Preparing the Vegetables

Sauté Aromatics

In a large skillet or pot, heat 2 tablespoons of oil over medium heat. Add 1 sliced onion, 2 minced garlic cloves, 1 teaspoon grated ginger, and 1 slit green chili. Sauté until the onion is golden brown.

Add Vegetables

Add the diced carrots, green peas, cauliflower florets, chopped green beans, and diced potato to the skillet. Stir-fry the vegetables for about 5-7 minutes until they start to soften.

Add Spices

Stir in the cumin seeds, coriander powder, turmeric powder, garam masala, and salt to taste. Cook for another 2-3 minutes until the spices are fragrant.

Combining and Finishing

Combine Rice and Vegetables

Gently fold the partially cooked rice into the vegetable mixture. Make sure the rice is evenly distributed among the vegetables.

Steam the Biryani

Cover the skillet with a tight-fitting lid and reduce the heat to low. Allow the biryani to steam for 15-20 minutes, letting the flavors meld and the rice finish cooking.

Final Touches

Once cooked, fluff the biryani with a fork. Add chopped fresh cilantro and lemon juice. Serve hot and enjoy!
