For the Chicken Marinade

Method

Marinating the Chicken

  1. 1

    Prepare the Marinade

In a large bowl, combine the yogurt, minced ginger, minced garlic, lemon juice, garam masala, cumin powder, paprika, and salt. Mix well until smooth.

  2. 2

    Marinate the Chicken

Cut the chicken breast into bite-sized pieces and add them to the marinade. Ensure all pieces are well coated. Cover the bowl and refrigerate for at least 1 hour, preferably overnight.

Cooking the Chicken

  1. 3

    Grilling the Chicken

Preheat your grill or a grill pan over medium-high heat. Thread the marinated chicken pieces onto skewers (if using). Grill the chicken for about 5-7 minutes on each side until cooked through and slightly charred. Remove from heat and set aside.

Making the Sauce

  1. 4

    Sauté Onions and Spices

In a large pan, heat the oil over medium heat. Add the finely chopped onion and sauté until translucent. Add the minced ginger and garlic, and cook for an additional minute until fragrant.

  2. 5

    Add Tomato Puree

Stir in the tomato puree, garam masala, cumin powder, and salt. Cook for about 5-7 minutes, stirring occasionally, until the sauce thickens slightly.

  3. 6

    Incorporate Cream

Lower the heat and stir in the coconut milk (or heavy cream). Allow the sauce to simmer for another 5 minutes, stirring occasionally.

Combining and Serving

  1. 7

    Combine Chicken and Sauce

Add the grilled chicken pieces to the sauce, stirring gently to coat the chicken evenly. Simmer for an additional 5 minutes to let the flavors meld.

  2. 8

    Garnish and Serve

Serve hot, garnished with fresh cilantro over basmati rice or with naan bread.
