    Prepare the Ingredients

    Chop the lamb into bite-sized pieces. Finely chop the onions, mince the garlic, and grate the ginger. Chop the tomatoes and set aside.

Cooking

    Sauté the Onions

    In a large pot, heat the vegetable oil over medium heat. Add the chopped onions and sauté until they become translucent, about 5-7 minutes.

    Add Garlic and Ginger

    Stir in the minced garlic and grated ginger, and cook for an additional 2 minutes until fragrant.

    Cook the Spices

    Add the cumin seeds, coriander powder, turmeric powder, garam masala, and red chili powder to the pot. Stir well and cook for 1-2 minutes to toast the spices.

    Brown the Lamb

    Add the lamb pieces to the pot, stirring to coat with the spice mixture. Cook for about 5-7 minutes until the lamb is browned on all sides.

    Add Tomatoes and Coconut Milk

    Stir in the chopped tomatoes and cook for another 5 minutes. Then, add the coconut milk and bring the mixture to a simmer.

    Simmer the Curry

    Reduce the heat to low, cover the pot, and let the curry simmer for about 1.5 hours, or until the lamb is tender. Stir occasionally and add salt to taste.

    Finish and Serve

    Once the lamb is tender, remove from heat. Garnish with chopped cilantro before serving. Enjoy with rice or naan.
