Prepare the Onions
Peel the onions and slice them into 1/4 inch thick rings. Separate the rings and set aside.

Make the Batter
In a large bowl, combine the flour, cornstarch, baking powder, salt, pepper, and garlic powder. Gradually whisk in the cold sparkling water until the batter is smooth.

Heat the Oil
In a deep frying pan or pot, heat the oil over medium-high heat until it reaches 350°F (175°C).

Coat the Onion Rings
Dip each onion ring into the batter, allowing any excess to drip off.

Carefully place the battered onion rings into the hot oil in batches. Fry until golden brown, about 2-3 minutes per side. Remove and drain on paper towels.
