Prepare the Broth
In a large stockpot, add the pork bones and chicken carcasses. Fill the pot with water and bring to a boil. Once boiling, reduce to a simmer and skim off any impurities that rise to the top.
Simmer the Broth
Add the green onions, garlic, and ginger to the pot. Simmer for at least 12 hours, adding more water as necessary to keep the bones submerged. The longer you simmer, the richer the flavor.
Strain the Broth
After simmering, strain the broth through a fine-mesh sieve or cheesecloth into a clean pot. Discard the solids and return the liquid to the pot.
Season the Broth
Stir in the soy sauce and mirin. Taste and adjust seasoning if necessary.
