Tonkatsu Preparation

Prepare the Pork
Pat the pork loin chops dry with paper towels. Season both sides with salt and black pepper.

Bread the Pork
Set up a breading station with three shallow dishes: one with flour, one with beaten eggs, and one with panko breadcrumbs. Dredge each pork chop in flour, dip into the beaten eggs, and then coat with panko breadcrumbs, pressing gently to adhere.

Fry the Tonkatsu
In a large skillet or deep frying pan, heat the vegetable oil over medium-high heat. Once hot, carefully add the breaded pork chops, frying in batches if necessary. Cook for about 4-5 minutes on each side, or until golden brown and cooked through. Remove and drain on paper towels.

Prepare the Cabbage
Finely shred the cabbage and set aside.

Slice the tonkatsu into strips and serve over a bed of shredded cabbage. Drizzle with tonkatsu sauce.
