In a large pot, combine chicken broth, Aka Miso, Shio Miso, soy sauce, and mirin. Bring to a simmer over medium heat, stirring until the miso is fully dissolved.
2. Cook the Noodles
In a separate pot, bring water to a boil and cook the ramen noodles according to package instructions. Drain and set aside.
3. Prepare Toppings
While the broth is simmering, prepare the toppings. Slice the green onions, cut the soft-boiled eggs in half, and rinse the bean sprouts.
4. Assemble the Ramen
In serving bowls, divide the cooked noodles. Ladle the miso broth over the noodles and top with green onions, soft-boiled eggs, nori sheets, bean sprouts, and a sprinkle of sesame seeds.
