Prepare the Mahi Mahi
Rinse the Mahi Mahi fillets under cold water and pat them dry with paper towels. Season both sides with salt and black pepper.

In three separate shallow dishes, place the flour in the first dish, beat the eggs in the second dish, and add the panko breadcrumbs to the third dish.

Bread the Mahi Mahi
Coat each seasoned Mahi Mahi fillet in flour, shaking off any excess. Dip it into the beaten eggs, then coat it with panko breadcrumbs, pressing gently to adhere.

In a large skillet, heat the vegetable oil over medium-high heat. Once hot, carefully place the breaded fillets in the skillet, cooking for about 3-4 minutes on each side or until golden brown and cooked through. Remove and drain on paper towels.
