In a large mixing bowl, cream together the unsalted butter, granulated sugar, and brown sugar until light and fluffy. Add 2 eggs and 2 tsp of vanilla extract, mixing until well combined. Stir in the flour, baking powder, and salt until just incorporated. Fold in the chocolate chips.

Prepare the Brownie Batter

In another mixing bowl, melt 1 cup of unsalted butter. Remove from heat and stir in 1 cup of sugar, 2 eggs, and 1 tsp of vanilla extract until smooth. Mix in the cocoa powder and flour until just combined.

Preheat the oven to 350°F (175°C). Grease a 9x13 inch baking dish. Pour the brownie batter into the bottom of the dish, spreading it evenly. Drop spoonfuls of the cookie dough over the brownie batter, spreading gently to cover.

Bake

Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.

Serve

Allow to cool slightly before cutting into squares. Serve warm with a scoop of Hilo homemade ice cream on top.
