    Wash and peel the potatoes. Slice them into thin rounds, about 1/8 inch thick. You may use a mandoline for even slices.

    Soak the Potato Slices

    Place the potato slices in a bowl of cold water and let them soak for at least 30 minutes. This helps to remove excess starch and makes the chips crispier.

    Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

    Drain the potato slices and pat them dry with a clean towel. In a large bowl, toss the potato slices with olive oil, salt, paprika, garlic powder, and black pepper until evenly coated.
