Method

Yankee Pot Roast

    Prepare the Roast

    Season the chuck roast with salt and black pepper on all sides.

    Sear the Meat

    In a large pot, heat olive oil over medium-high heat. Sear the roast for about 4-5 minutes on each side until browned.

    Add Vegetables

    Add the chopped onion, carrots, celery, and minced garlic to the pot and sauté for another 3-4 minutes.

    Simmer

    Pour in the beef broth, add thyme, bay leaves, and Worcestershire sauce. Bring to a boil, then reduce heat to low. Cover and let it simmer for about 3-4 hours until the meat is tender.

Garlic Mashed Potatoes

    Boil Potatoes

    In a large pot, boil the peeled and cubed potatoes until tender, about 15-20 minutes. Drain well.

    Mash Potatoes

    In the same pot, add butter, minced garlic, milk, salt, and pepper. Mash until smooth and creamy.

Buttered Dill Carrots

    Cook Carrots

    In a pot, boil the sliced carrots until tender, about 10 minutes. Drain.

    Prepare with Butter and Dill

    Return the carrots to the pot, add butter, chopped dill, salt, and pepper. Toss to coat and heat through.
