Vegetable Medley

Method

Preparing the Ribs

  1. 1

    Season the Ribs

Preheat your oven to 300°F (150°C). In a small bowl, mix together salt, black pepper, paprika, garlic powder, and brown sugar. Rub the mixture all over the pork ribs.

  2. 2

    Bake the Ribs

Place the seasoned ribs on a baking sheet lined with aluminum foil. Cover the ribs tightly with another piece of foil and bake for 2.5 to 3 hours until they're tender.

  3. 3

    Add BBQ Sauce

Remove the ribs from the oven, discard the top foil, and brush the BBQ sauce generously over the ribs. Broil on high for 5-7 minutes to caramelize the sauce.

Making Cheddar Potatoes

  1. 4

    Cook Potatoes

Peel and cube the potatoes. Boil in salted water until tender, about 15-20 minutes. Drain and return to pot.

  2. 5

    Mix Ingredients

Add butter, milk, salt, and pepper to the potatoes. Mash until smooth. Stir in the shredded cheddar cheese until melted and well combined.

Preparing Vegetable Medley

  1. 6

    Sauté Vegetables

In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute. Then add sliced carrots, broccoli florets, and diced bell pepper. Cook until vegetables are tender-crisp, about 5-7 minutes.

  2. 7

    Season the Vegetables

Season with salt and black pepper to taste. Serve warm alongside the ribs and cheddar potatoes.
