Cooking Steps

  1. 1

    Prepare the Potatoes

Preheat your oven to 400°F (200°C). Wash the russet potatoes thoroughly and pierce them several times with a fork. Rub them with olive oil and sprinkle with salt. Place them directly on the oven rack and bake for 45-60 minutes until tender.

  2. 2

    Cook the Tenderloin

While the potatoes are baking, season the tenderloin steak with salt and black pepper. Heat a skillet over medium-high heat and cook the steak for about 4-5 minutes on each side for medium-rare, or until desired doneness. Remove from heat, let it rest for 5 minutes, then slice thinly.

  3. 3

    Prepare the Toppings

In a small bowl, mix the shredded cheddar and Monterey Jack cheeses. Chop the scallions and crumble the cooked bacon.

  4. 4

    Assemble the Loaded Potatoes

Once the potatoes are done baking, remove them from the oven and let them cool slightly. Cut a slit down the center of each potato and gently fluff the insides with a fork. Add a tablespoon of butter to each potato, then top with the cheese mixture, sliced tenderloin, crumbled bacon, chopped scallions, and a dollop of sour cream.

  5. 5

    Serve

Serve the loaded baked potatoes hot, garnished with additional scallions if desired.
