Cook the Tenderloin
While the potatoes are baking, season the tenderloin steak with salt and black pepper. Heat a skillet over medium-high heat and cook the steak for about 4-5 minutes on each side for medium-rare, or until desired doneness. Remove from heat, let it rest for 5 minutes, then slice thinly.

Prepare the Toppings
In a small bowl, mix the shredded cheddar and Monterey Jack cheeses. Chop the scallions and crumble the cooked bacon.

Assemble the Loaded Potatoes
Once the potatoes are done baking, remove them from the oven and let them cool slightly. Cut a slit down the center of each potato and gently fluff the insides with a fork. Add a tablespoon of butter to each potato, then top with the cheese mixture, sliced tenderloin, crumbled bacon, chopped scallions, and a dollop of sour cream.

Serve the loaded baked potatoes hot, garnished with additional scallions if desired.
