Instructions

  1. 1

    Prepare the Matcha Mixture

In a small bowl, whisk together the matcha green tea powder and 2 tablespoons of hot water until smooth. Set aside.

  2. 2

    Heat the Cream and Milk

In a medium saucepan, combine the heavy cream, whole milk, and granulated sugar. Heat over medium heat until the sugar dissolves and the mixture is hot but not boiling.

  3. 3

    Whisk the Egg Yolks

In a separate bowl, whisk the egg yolks until they are pale in color. Gradually add a small amount of the hot cream mixture to the yolks, whisking constantly to temper them.

  4. 4

    Combine and Cook

Pour the egg yolk mixture back into the saucepan with the remaining cream mixture. Cook over low heat, stirring constantly, until the mixture thickens enough to coat the back of a spoon (about 5-7 minutes).

  5. 5

    Add Matcha and Chill

Remove from heat and stir in the matcha mixture, vanilla extract, and a pinch of salt. Allow the mixture to cool to room temperature, then refrigerate for at least 4 hours or overnight.

  6. 6

    Churn the Ice Cream

Once chilled, pour the mixture into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency.

  7. 7

    Freeze

Transfer the ice cream to an airtight container and freeze for at least 4 hours or until firm.
