Prepare the Vegetables and Seafood

Wash and cut the vegetables into thin, bite-sized pieces. If using seafood, clean and devein the shrimp or cut the fish into strips.

Make the Tempura Batter

In a bowl, mix the all-purpose flour, cornstarch, and baking powder. Gradually add ice water until the batter is slightly lumpy. Do not overmix.

Heat the Oil

In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Tempura

Dip each piece of vegetable or seafood into the batter, allowing excess to drip off. Carefully drop into the hot oil. Fry in batches to avoid overcrowding, cooking for about 2-3 minutes or until golden brown. Remove with a slotted spoon and drain on paper towels.

Serve

Sprinkle with salt and serve hot with dipping sauce.
