1. Prepare Sushi Rice
Rinse the sushi rice under cold water until the water runs clear. Combine the rinsed rice and water in a rice cooker and cook according to the manufacturer's instructions. Once done, let it cool slightly.
2. Season the Rice
In a small bowl, mix together rice vinegar, sugar, and salt. Gently fold this mixture into the warm sushi rice. Let it cool to room temperature.
3. Assemble the Chirashi
In a large bowl, place a layer of sushi rice, then top with spring mix and diced fish. Add sliced jalapeño on top.
4. Add Sauces
Drizzle ponzu sauce, sesame oil, and spicy apple vinaigrette over the top of the assembled chirashi.
5. Serve
Serve the spicy chirashi immediately with miso soup on the side.
