Method

Cooking the Steak

Prepare the Steak

Season the top sirloin steaks with salt and black pepper on both sides.

Sear the Steak

In a large skillet, heat olive oil over medium-high heat. Add the steaks and sear for about 4-5 minutes on each side for medium-rare, or until desired doneness.

Rest the Steak

Remove the steaks from the skillet and let them rest for 5 minutes before slicing.

Making the Demi-Glace

Prepare the Sauce

In the same skillet, add brandy and scrape the bottom to deglaze. Let it reduce by half.

Add Stock

Add beef stock and peppercorns, and simmer until the sauce thickens, about 10-15 minutes.

Finish the Sauce

Remove from heat and stir in butter until melted and smooth.

Preparing the Mixed Greens

Toss the Salad

In a large bowl, combine mixed greens, cherry tomatoes, and cucumber. Drizzle with olive oil and balsamic vinegar, and season with salt and pepper to taste. Toss to combine.

Making Fries

Prepare the Potatoes

Cut the potatoes into fries and soak in water for 30 minutes. Drain and pat dry.

Cook the Fries

Preheat oven to 425°F (220°C). Toss the fries with olive oil and salt, then spread on a baking sheet. Bake for 25-30 minutes until golden and crispy, flipping halfway.

Serving

Plate the Dish

Slice the rested steaks and serve with the brandy peppercorn demi-glace drizzled over the top, alongside mixed greens and fries.
