Prepare the Coleslaw

In a medium bowl, combine shredded cabbage and grated carrots. In a separate small bowl, whisk together apple cider vinegar, sugar, salt, and black pepper. Pour the dressing over the cabbage and carrots and toss to combine. Refrigerate until serving.

Prepare the Oysters

Pour buttermilk over the oysters in a bowl and let them soak for about 15 minutes. In another bowl, mix cornmeal, flour, and Cajun seasoning.

Fry the Oysters

Heat vegetable oil in a deep skillet over medium-high heat. Dredge each oyster in the cornmeal mixture, shaking off excess. Fry the oysters in batches for 2-3 minutes or until golden brown. Remove and place on paper towels to drain excess oil.

Assemble the Po' Boy

Slice the baguette in half lengthwise. Spread mayonnaise on both sides. Layer with fried oysters, lettuce, tomato slices, and pickles.

Prepare the Fries

Cook the frozen French fries according to package instructions, either in the oven or deep-fried.

Plate the Po' Boy alongside a serving of coleslaw and fries. Enjoy!
