Prepare the Chicken or Fish

Season the chicken breasts or fish fillets with salt, pepper, and paprika. Heat olive oil in a pan over medium-high heat. Cook for 5-7 minutes per side, or until cooked through and golden brown.

Cook the Collard Greens

In another pot, cook the diced Tasso ham over medium heat for 3-4 minutes until slightly crispy. Add the collard greens and chicken broth. Cover and simmer for about 20 minutes or until the greens are tender.

Prepare the Grits

In a separate pot, bring 4 cups of water to a boil. Slowly whisk in the grits, reduce heat to low, and cook, stirring frequently, for about 20 minutes until thickened. Stir in butter and cheddar cheese until melted and creamy.

Serve the Dish

On a plate, serve a portion of grits topped with the collard greens and Tasso ham. Place the cooked chicken or fish on the side and enjoy!
