Method

Preparation Directions

  1. 1

    Cook Bacon

In a large pot over medium heat, cook the bacon until crispy. Remove bacon, crumble, and set aside.

  2. 2

    Sauté Vegetables

In the same pot with the bacon fat, add butter. Sauté onion and celery until softened, about 5 minutes.

  3. 3

    Add Potatoes and Broth

Add diced potatoes, chicken broth, thyme, and bay leaf to the pot. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 15 minutes.

  4. 4

    Add Clams and Cream

Add the fresh clams and heavy cream to the pot. Cook until the clams open, about 5-7 minutes. Discard any clams that do not open.

  5. 5

    Season and Serve

Season with salt and black pepper to taste. Serve hot, garnished with crumbled bacon and chopped parsley.
