Prepare the Tomatoes
Slice the green tomatoes into 1/4 inch thick slices. Sprinkle both sides with salt and let them sit for 10 minutes to draw out excess moisture.

Set Up Breading Station
In one bowl, place the flour. In another bowl, pour the buttermilk. In a third bowl, mix the cornmeal, black pepper, and cayenne pepper.

Bread the Tomatoes
Dredge each tomato slice in flour, shaking off any excess. Dip into the buttermilk, allowing the excess to drip off, and then coat with the cornmeal mixture, pressing lightly to adhere.

Heat the Oil
In a large skillet, heat the vegetable oil over medium-high heat until it shimmers.

Fry the Tomatoes
Carefully place the breaded tomato slices in the hot oil, frying in batches to avoid overcrowding. Fry for 3-4 minutes on each side until golden brown.

Drain and Serve
Remove the fried tomatoes from the skillet and place them on paper towels to drain excess oil. Serve warm as a starter.
