Marinate the Gator Tail
Place the gator tail meat in a bowl and cover with buttermilk. Let it marinate in the refrigerator for at least 1 hour.

Prepare the Breading
In a shallow dish, mix together flour, cornmeal, cajun seasoning, salt, and black pepper.

Heat the Oil
In a deep frying pan or pot, heat the oil over medium-high heat until it reaches 350°F (175°C).

Bread the Gator Tail
Remove the gator tail from the buttermilk and allow excess to drip off. Dredge the pieces in the flour mixture until fully coated.

Fry the Gator Tail
Carefully place the breaded gator tail pieces into the hot oil. Fry in batches for about 3-4 minutes or until golden brown and cooked through.

Drain and Serve
Remove the fried gator tail from oil and place on paper towels to drain excess oil. Serve hot with Cowgill’s Datil Pepper Aioli.
