We know tacos don’t scream gluten-free, but all you need to do is sub out the flour tortilla for a corn tortilla or bed of lettuce and you’ll be back on track to a gluten-free lunch. We’re very serious about tacos, like many of our fellow restaurants around Jacksonville. Order these tacos and they’ll soon be some of your favorites. You can’t go wrong with fresh cod, salsa fresca and adobe sour cream.

    Prepare the Cod

    In a bowl, combine olive oil, cumin, paprika, salt, and black pepper. Add the fresh cod fillets to the bowl and coat them evenly with the spice mixture. Let marinate for about 15 minutes.

    Cook the Cod

    Heat a grill or skillet over medium heat. Cook the marinated cod for about 4-5 minutes on each side, or until the fish flakes easily with a fork. Remove from heat and flake the cod into bite-sized pieces.

    Prepare the Adobo Sour Cream

    In a small bowl, mix the sour cream with adobo sauce until well combined. Adjust seasoning to taste.

    Assemble the Tacos

    Warm the corn tortillas on a skillet for about 30 seconds on each side. Fill each tortilla with a portion of the flaked cod, top with salsa fresca, a dollop of adobo sour cream, and garnish with fresh cilantro if desired.

    Serve

    Serve the tacos with lime wedges on the side for squeezing over the top.
