Method

Preparing the Steak

  1. 1

    Season the Steak

Pat the ribeye steaks dry with paper towels. Rub both sides with olive oil, then season generously with salt and black pepper. Let them sit at room temperature for about 30 minutes.

  2. 2

    Cook the Steak

Heat a skillet or grill over medium-high heat. Add the steaks and cook for about 4-5 minutes on each side for medium-rare, or until desired doneness is reached. During the last minute of cooking, sprinkle fresh rosemary on top. Remove from the heat and let rest for 5 minutes before slicing.

Preparing the Fries

  1. 3

    Cut the Potatoes

Peel the russet potatoes and cut them into thin strips (about 1/4 inch thick). Soak the fries in cold water for at least 30 minutes to remove excess starch.

  2. 4

    Fry the Potatoes

Heat vegetable oil in a deep fryer or a large, heavy pot to 350°F (175°C). Drain the soaked potatoes and dry them thoroughly. Fry in batches for about 4-5 minutes until golden brown and crispy. Remove with a slotted spoon and drain on paper towels. Season with salt immediately.

Preparing the Side Salad

  1. 5

    Assemble the Salad

In a large bowl, combine mixed greens, halved cherry tomatoes, and sliced cucumber. Drizzle with olive oil and balsamic vinegar. Season with salt and black pepper to taste. Toss gently to combine.
