Cooking Pasta

Boil Water
In a large pot, bring salted water to a rolling boil.

Cook Spaghetti
Add the spaghetti to the boiling water and cook according to package instructions, usually about 8-10 minutes, until al dente.

Reserve Pasta Water
Before draining, reserve about 1 cup of pasta cooking water.

Drain Pasta
Drain the spaghetti and set aside.
Preparing Sauce

Cook Pancetta
In a large skillet over medium heat, add the pancetta and cook until crispy, about 4-5 minutes. Remove from heat.

Mix Egg Yolks and Cheese
In a bowl, whisk together the egg yolks, grated Parmesan cheese, and black pepper until well combined.
Combining Ingredients

Combine Pasta and Pancetta
Add the drained spaghetti to the skillet with pancetta, tossing to combine.

Add Egg Mixture
Quickly pour the egg and cheese mixture over the hot pasta, tossing continuously to create a creamy sauce. If the sauce is too thick, add reserved pasta water gradually until desired consistency is reached.

Taste and adjust seasoning with salt and additional black pepper as needed.
Serving

Garnish and Serve
Serve immediately, garnished with fresh parsley and additional grated Parmesan if desired.
