Chicken Preparation
- 1
Prepare the Chicken
Preheat your oven to 375°F (190°C). Start by seasoning the chicken breasts with salt and black pepper on both sides.
- 2
Breading Process
Set up a breading station with three shallow bowls. In the first bowl, place the flour; in the second, beat the eggs; and in the third, combine the breadcrumbs and grated Parmesan cheese.
- 3
Coat the Chicken
Dredge each chicken breast in the flour, shaking off the excess. Dip into the beaten eggs and finally coat with the breadcrumb and Parmesan mixture, pressing to adhere.
Cooking
- 4
Fry the Chicken
In a large skillet, heat the olive oil over medium heat. Once hot, add the breaded chicken breasts and fry for about 4-5 minutes on each side, or until golden brown and cooked through.
- 5
Assemble the Dish
Once the chicken is cooked, place it on a baking sheet. Spoon marinara sauce over each chicken breast and sprinkle with shredded mozzarella cheese.
- 6
Bake
Transfer the baking sheet to the preheated oven and bake for 15-20 minutes, or until the cheese is melted and bubbly.
- 7
Garnish and Serve
Remove from the oven, garnish with fresh basil if desired, and serve hot with pasta or a side salad.
