Cooking Pasta

Boil Water
Fill a large pot with water, add a generous amount of salt, and bring it to a boil over high heat.

Cook Spaghetti
Once the water is boiling, add the spaghetti and cook according to the package instructions until al dente, usually about 8-10 minutes.

Reserve Pasta Water
Before draining the pasta, reserve about 1 cup of the pasta cooking water.

Drain Pasta
Drain the spaghetti in a colander and set aside.
Making Sauce

Cook Pancetta
In a large skillet over medium heat, add the pancetta. Cook until it becomes crispy, about 5-7 minutes. Remove from heat and set aside.

Prepare Egg Mixture
In a bowl, whisk together the eggs, grated Parmesan cheese, and a generous amount of black pepper until well combined.
Combining Ingredients

Combine Pasta and Pancetta
Return the skillet with pancetta to low heat, add the drained spaghetti, and toss to combine.

Taste and adjust seasoning with salt and more black pepper as needed.
Serving

Serve immediately in bowls, garnished with chopped fresh parsley and additional grated Parmesan if desired.
