Preparation Instructions

  1. 1

    Preheat the Oven

Preheat your oven to 200°C (390°F).

  2. 2

    Prepare the Baking Dishes

Grease four ramekins or small oven-safe dishes with butter and dust with flour. This will help the fondant release easily after baking.

  3. 3

    Melt Chocolate and Butter

In a heatproof bowl, combine the dark chocolate and unsalted butter. Melt them together over a saucepan of simmering water (double boiler method) or in the microwave in short bursts (15-20 seconds), stirring until smooth.

  4. 4

    Mix Sugar and Eggs

In a separate bowl, whisk together the granulated sugar and large eggs until the mixture is light and fluffy.

  5. 5

    Combine Mixtures

Once the chocolate and butter are melted and slightly cooled, add the vanilla extract and a pinch of salt. Gradually fold in the sugar and egg mixture until well combined.

  6. 6

    Add Flour

Sift the all-purpose flour over the chocolate mixture and gently fold it in until just combined, being careful not to overmix.

  7. 7

    Fill Ramekins

Divide the batter evenly among the prepared ramekins, filling them about ¾ full.

  8. 8

    Bake the Fondant

Place the ramekins on a baking tray and bake in the preheated oven for about 10-12 minutes. The edges should be set, but the center should still be soft and slightly jiggly.

  9. 9

    Cool and Serve

Remove from the oven and let them sit for 1-2 minutes. Carefully run a knife around the edges to loosen, then invert onto plates to serve. Enjoy immediately for that molten center!
