Calamari Preparation

Prepare the Calamari
If the calamari is whole, clean and slice it into rings. Pat the calamari rings dry with paper towels.

Prepare the Coating
In a large bowl, mix together the all-purpose flour, cornstarch, salt, black pepper, and cayenne pepper.

Coat the Calamari
Dredge each calamari ring in the flour mixture, ensuring they are evenly coated. Shake off any excess flour.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Calamari
Working in batches, carefully add the coated calamari rings to the hot oil. Fry for 2-3 minutes or until golden brown and crispy.

Drain the Calamari
Use a slotted spoon to remove the fried calamari from the oil and transfer them to a paper towel-lined plate to drain excess oil.

Sauté the Garlic
Add the minced garlic and sauté for about 1 minute, or until fragrant, being careful not to burn it.

Add the Tomatoes
Pour in the canned crushed tomatoes and stir to combine.

Season the Sauce
Add the red pepper flakes, dried oregano, salt, and black pepper. Stir to combine and let simmer for about 10-15 minutes.

Finish the Sauce
Stir in the chopped fresh basil just before serving. Adjust seasoning if needed.
