Preparation of Vegetables

    Chop the Vegetables

    Wash and chop the spinach, mushrooms, zucchini, broccoli, squash, nopales, red potatoes, carrots, onion, and mixed bell peppers into bite-sized pieces.

    Boil the Potatoes

    In a pot, bring water to a boil. Add the red potatoes and cook for about 10-15 minutes until fork-tender. Drain and set aside.

Cooking the Fajitas

    Heat the Oil

    In a large skillet, heat the olive oil over medium heat.

    Sauté the Onions and Peppers

    Add the chopped onion and mixed bell peppers to the skillet. Sauté for about 3-4 minutes until they start to soften.

    Add Remaining Vegetables

    Stir in the mushrooms, zucchini, broccoli, squash, nopales, carrots, and boiled red potatoes. Cook for another 5-7 minutes until all the vegetables are tender.

    Season the Fajitas

    Add cumin, paprika, chili powder, salt, and black pepper to taste. Stir well to coat the vegetables evenly. Drizzle lime juice over the top and mix thoroughly.

Serving the Fajitas

    Warm the Tortillas

    In a separate pan or directly over the flame, warm the tortillas for about 1 minute on each side until soft and pliable.

    Assemble the Fajitas

    Place a generous portion of the cooked vegetable mixture onto each tortilla. Roll up and serve warm.
