Soup Preparation

    Sauté Aromatics

    In a large pot, heat the vegetable oil over medium heat. Add the minced garlic and chopped onion. Sauté for 2-3 minutes until the onion becomes translucent.

    Add Tomatoes and Vegetables

    Stir in the diced tomatoes, chopped carrots, and zucchini. Cook for an additional 5 minutes until the vegetables begin to soften.

    Add Broth and Seasonings

    Pour in the vegetable broth and bring the mixture to a boil. Add the salt and black pepper, stirring to incorporate.

    Cook the Fideo

    Once boiling, add the fideo pasta to the pot. Reduce the heat to a simmer and cook for 8-10 minutes, or until the pasta is al dente.

    Garnish and Serve

    Remove the pot from heat. Ladle the soup into bowls and garnish with chopped cilantro. Serve hot.
